Tray A Date Nut Bar [18] (Delma Gomes)

1 ½ cups fresh dates 1 tsp vanilla ½ cup sifted all-purpose flour Powdered sugar
| 2 large eggs ¾ cup brown sugar packed ½ tsp baking powder | 1 cup walnuts 2 tbsp soft butter or margarine ¼ tsp salt |
- Pit and slice the dates.
- Beat the eggs until thick and foamy and then add the sugar, vanilla and soft butter, beating until well blended and creamy.
- Sift the flour, baking powder and salt into the egg mixture and mix to a smooth paste or batter.
- Stir in the dates and nuts.
- Turn into a well greased and floured 9” square pan and bake in a moderately slow 325F/162C oven for 25 to 30 minutes.
- Remove from pan and allow to cool on a wire rack.
- When cool, cut into bars 1 ½ x 3 inches, roll in the powdered sugar and store in an air-tight container.
