Shrimps in Aspic [6] (Delma Gomes)

Pimiento
A few capers

Boiled egg whites cut into the shape of fish, flowers or animals.
  1. Cover the bottom of a mould with a layer of aspic 1/4 “ thick.
  2. When solid, garnish with pimiento and the egg white carvings.
  3. Fill the mould with shrimp, a few capers and chopped nuts.
  4. Pour dissolved aspic over everything.
  5. Place in refrigerator until firm.
  6. Serve on lettuce leaves garnished with radishes, cut into rose shapes.
  7. Add sliced boiled eggs and tomatoes.
