1 lb potatoes 2 – 3 oz butter or dripping
Parsley

- Peel and slice potatoes very thinly.
- Melt the butter and brush sides and bottom of a cake tin or round Pyrex dish.
- Put in potato slices layer by layer, seasoning well.
- Continue until dish is filled and then pour the last of the butter over the top.
- Cook for one hour in a moderately hot oven,
- Turn out of the dish onto a hot dish and garnish with parsley and carrots.
- Cut into slices like a cake.
