Pineapple Upside Down Cake (Fay Anne de Freitas)
½ lb butter
4 separated egg yolks / whites
1 envelope gelatin
1 cup sugar

Juice of 1 lemon
1 bottle whipping cream
Grated rind of two lemons
1 tin crushed pineapple
1 sponge cake
3 tbsp warm water
  1. Mix butter, sugar, egg yolks, lemon juice and lemon rind together.
  2. Mix gelatin in the warm water and add to the mixture,
  3. Drain the pineapple and add to the mixture.
  4. Beat the egg whites stiff with some sugar and fold into the mixture.
  5. In a bowl-style serving dish, add a layer of the mixture followed by a layer of the cake and so on, finishing with a final layer of mixture.
  6. Place in fridge to set.
  7. Once set, turn the dish over to turn out the cake onto a plate and cover with whipping cream.
