Pancakes (Delma Gomes) | ||
6 lb flour 1 tbsp butter 36 eggs well beaten | 3 tins evaporated milk Pinch of salt 2 oz yeast | 3 tins water 1 tbsp sugar 1 pint lukewarm water |
1. Dissolve yeast in the liquids and add the butter, salt and sugar. 2. Add the well beaten eggs, and stir in the flour. Allow to rise. 3. Fry in deep fat. | ||

6 lbs flour | 3 lbs flour | 1 1/2 lbs flour |
3 tins evaporated milk 3 tins water 1 tbsp butter A pinch of salt A tbsp of sugar 3 dozen eggs 2 oz yeast 1 pt lukewarm water | 1½ tins evaporated milk 1½ tins water 1 dsp butter A pinch of salt A dsp of sugar 18 eggs 1 oz yeast ½ pt lukewarm water | ¾ tins evaporated milk ¾ tins water ½ dsp butter A pinch of salt ½ dsp butter 9 eggs ½ oz yeast ½ pt lukewarm water |
1. Dissolve yeast in water. 2. Add milk and then well-beaten eggs. 3. Add flour etc. and allow to rise – until double in bulk. 4. Fry in very hot fat, drain and serve with syrup. |
