Marinated Pork [4]
IMPORTANT: The meat must be marinated for
48 hours |
2 lbs lean pork 6-10 cloves of garlic sliced 1 tsp paprika 1 tsp ground pepper
| 1 tsp sweet marjoram 1 tsp All Spice 1 tsp salt
| 1 tbsp aged
vinegar
1 tsp oil
White wine to cover |
- Cube the pork and marinate with all of the ingredients except the oil for 48 hours.
- Transfer to a saucepan, bring to the boil and simmer for 30 minutes or until the pork loses its pinkness.
- Heat the oil in a skillet, add the pork cubes from the marinade, and cook until brown turning frequently.
- Strain the marinade, slowly adding it to the skillet from the strainer, allowing it to reduce after each addition.
- Serve the pork with the marinade sauce.
