Hot Potato Salad - delicious with steak, chops etc. (Gene Watkinson) |
2 lb potatoes ½ red pepper ½ cup French dressing 3 oz cheese
| 2 sticks celery 2 tbsp parsley chopped 2 rashers bacon Salt and pepper
| 1 onion ¼ cup sour cream 2 hard-boiled eggs chopped

- Peel and dice the potatoes and the cook in boiling salted water until tender. Drain well.
- Slice the celery diagonally. Peel and chop the onions. Slice the red pepper.
- Combine the hot potatoes, celery, onion, pepper and parsley in a bowl.
- In another bowl, mix the sour cream and French dressing until smooth and season with salt and pepper.
- Pour over the potato mixture, mix lightly, and then spoon into a shallow oven-proof dish.
- Dice the bacon and sauté in a pan until crisp. Drain and then sprinkle the bacon and the chopped eggs over the potatoes.
- Grate the cheese and sprinkle over the potato mixture.
- Heat under a hot grill until the cheese has melted and is golden brown.
