Garlic Pork (Gene Watkinson) |
3-4 lb leg of lean pork (just a little fat)
| 2 pints vinegar 1 bunch thyme 4-6 cloves
| ½ lb garlic 6-8 wiri-wiri peppers 4 tsp salt

- Cut the pork into suitably sized pieces and steep in ¼ pint vinegar and ¼ pint water. Lift out individual pieces using two forms and continue to steep in cooking pot with a similar mixture.
- Pound together the pepper, garlic and mixed thyme (bread leaf and fine leaf).
- Add to the remaining vinegar and then add the salt and cloves.
- Pour over the pork making sure that there is enough liquid to cover the pork completely.
- Leave to soak for 3 to 4 days.
- To serve, boil the pork in a mixture containing have pot liquid and half water. Transfer the pork to a covered pan and fry or bake.
