Feather Sponge - Basic - very good (Delma Gomes)

2 ½ cups all-purpose flour1 tsp salt 1 cup corn oil
| ½ cup corn starch 1 ½ cup granulated sugar 1 cup water | 4 tsp baking powder 4 eggs separated |
- Line the bottom of 7” sandwich tins with grease-proof paper and grease lightly.
- Grease and line a deep 7” cake tin. DO THESE FIRST!
- Sieve the dry ingredients into a bowl.
- Mix the egg yolks together lightly with a fork and add the corn oil and water.
- Stir this mixture into the dry ingredients and neat well to form a smooth, slack batter.
- Whisk the egg whites until stiff, and then fold into the mixture
May be stored for 6 months in deep freeze. Put foil paper between each layer.
