Apple Pudding  (Gene Watkinson from Muriel)
3 oz butter
1 oz rice flour or semolina

3 oz ground almonds
1 egg beaten – size 3
4 oz sugar
3 large cooking apples
  1. Cream the butter and sugar and then stir in the almonds, rice flour and beaten egg.
  2. Peel the apples and slice thinly. Place in the bottom of an oven-proof dish with sugar to sweeten.
  3. Spread the almond mixture on top and decorate with almonds.
  4. Bake at Gas 4/350F/180C for 30-45 minutes.
  5. Serve hot, warm or cold – freezes well.
