American Frosting (Delma Gomes)
12 oz sugar
ΒΌ tsp cream of tartar

3 tbsp water
2 egg whites
  1. Beat sugar and water on double boiler until sugar melts and then add egg whites and cream of tartar.
  2. Beat until light and fluffy.

American Frosting (Gene Watkinson)
1 egg white
2 tbsp water
6 oz icing sugar

Pinch of salt
1 tbsp golden syrup
1 tsp lemon juice
  1. Place all ingredients in a double boiler or a basin over a saucepan of hot water and whisk until the icing stands in peaks.
  2. Remove from the heat and continue whisking until the mixture has cooled.
  3. Spread over the cake using a palette knife.

This frosting must be used as soon as possible.
