Yam Any (Fay Anne de Freitas)
1 ½ lbs yam
Ghee for frying
2 onions chopped
½ tsp garam masala

A few coriander leaves
1 inch ginger
2 green chilis chopped

1 tsp salt
½ tsp paprika or chili powder
1 ½ tsp coriander powder

  1. Wash, peel and soak the yams in salted water for half an hour.
  2. Drain and cut into cubes.
  3. Deep fry until tender and then drain.
  4. In a separate pan, fry the onions in 2 tbsp of ghee. Once translucent, add the spices and fry for a few minutes.
  5. Stir in the yam cubes and fry gently for 5 minutes.
  6. Garnish with chopped coriander leaves and serve hot with rice.
