Victoria Sandwich (Delma Gomes)
3 eggs
Castor sugar
3 tbsp warm jam or lemon curd

Pinch of salt
Self-raising flour
Butter same weight as eggs
1 – 2 tbsp milk
  1. Cream the butter until it is soft. Add the sugar and continue creaming until light and fluffy.
  2. Whisk the eggs and beat them gradually into the mix.
  3. Sift the flour with a pinch of salt and then fold it into the mixture, a third at a time, adding milk as necessary to make the mixture drop easily from a spoon.
  4. Spread into prepared sandwich tins and bake in a moderate oven 350F/176C for 40 to 50 minutes for a single cake, or for 20 minutes if mix is split between two cake tins.
  5. Turn out onto a wire rack.
  6. When cool, sandwich with the jam or lemon curd.

2 oz flour
2 oz castor sugar
2 oz margarine
1 egg
¼ tsp baking powder
2 tbsp warm water
Grated lemon rind or ½ tsp essence
1 to 2 tbsp jam
Rice flour
  1. Grease a shallow round tin and dust well with rice flour.
  2. Cream the margarine and sugar.
  3. Add the egg and half of the flour. Beat well.
  4. Add the rest of the flour alternately with the liquid, heating well.
  5. Add the baking powder with the last teaspoonful of flour.
  6. Turn into prepared tin. Bake 20 to 30 minutes in a very moderate oven.
  7. When cold, split through centre and spread jam. Rejoin halves.
