Tuna – Creamed (Fay Anne de Freitas)
1 oz margarine
3 tomatoes chopped
1 oz flour

7 oz tin of tuna
½ pint of milk
1 ½ lbs potatoes

3 hard-boiled eggs - chopped
Salt and pepper

  1. Create a while sauce by gently heating and stirring the margarine and milk  with salt and pepper to taste.
  2. Add the eggs, tomatoes and tuna to the white sauce.
  3. Peel and then boil the potatoes until cooked.
  4. Drain and mash the potatoes.
  5. Arrange the mashed potato in a ring around a serving dish and place under grill until browned.
  6. Add the tuna to the centre of the dish.
