Tray A Date Nut Bar [18] (Delma Gomes)
1 ½ cups fresh dates
1 tsp vanilla
½ cup sifted all-purpose flour
Powdered sugar

2 large eggs
¾ cup brown sugar packed
½ tsp baking powder
1 cup walnuts
2 tbsp soft butter or margarine
¼ tsp salt
  1. Pit and slice the dates.
  2. Beat the eggs until thick and foamy and then add the sugar, vanilla and soft butter, beating until well blended and creamy.
  3. Sift the flour, baking powder and salt into the egg mixture and mix to a smooth paste or batter.
  4. Stir in the dates and nuts.
  5. Turn into a well greased and floured 9” square pan and bake in a moderately slow 325F/162C oven for 25 to 30 minutes.
  6. Remove from pan and allow to cool on a wire rack.
  7. When cool, cut into bars 1 ½ x 3 inches, roll in the powdered sugar and store in an air-tight container.
