Tongue – Dutch style (Delma Gomes from Stephanie)
1 tongue
1 large tin tomatoes drained
½ lb raisins

½ lb margarine
Small bottle cooking wine
1 lb onions sliced thinly


  1. Boil the tongue until tender in salted water.
  2. Add the other ingredients, but only half of the wine.
  3. Simmer in a slow oven between 1 and 2 hours basting continually and keeping covered.
  4. Add the remaining wine after simmering has evaporated some of the liquid.
