Tomato and Tuna Hot Pot (Gene Watkinson)
½ lb tomatoes skinned/sliced
½ oz butter
2 oz cheddar – finely grated

3 ½ oz can tuna drained
¼ pint milk
½ oz cheddar grated

½ lb potatoes boiled/sliced
½ oz plain flour
Salt and pepper

  1. Arrange half of the tomato slices at the bottom of a 1 pint ovenproof dish.
  2. Spread flaked tuna over the tomatoes and cover with the remaining tomatoes.
  3. Add a layer of the sliced potatoes.
  4. Create a cheese sauce by combining the butter, milk, sifted plain flour, finely grated cheddar and seasoning to taste to a bowl and mixing thoroughly.
  5. Pour the cheese sauce over the potato layer and top with the coarsely grated cheddar cheese.
  6. Bake in a hot over 400F/205C for about 20 minutes.
