Tomato Catsup - Boston cookbook (Delma Gomes)
8 qts ripe tomatoes
1 tbsp cayenne pepper
2 tbsp cinnamon
¼ cup salt
1 tbsp mace

2 qts vinegar
2 cups sugar
1 tbsp celery seeds
6 cloves garlic (opt)

  1. Cut the tomatoes into pieces and add the other ingredients/options.
  2. Cook slowly until reduced by half – about 2 hours.
  3. Strain, reheat and then seal.

Makes 2 quarts
