Tiramisu (Fay Anne de Freitas)
2 pkts Sponge fingers or Marie biscuits
4 eggs – separated into whites and yolks

Strong coffee brew
12 oz mascarpone cheese
Grated chocolate
4 tbsp sugar
Rum
  1. Beat the egg whites.
  2. Beat the egg yolks with the sugar.
  3. Add the mascarpone cheese and grated chocolate to the egg yolk mix.
  4. Add the egg whites by folding in.
  5. Add the coffee and rum to taste – keep mix fairly solid.
  6. Layer a glass dish with a little of the mascarpone/egg mix.
  7. Add a layer of biscuits.
  8. Add further layers of mascarpone followed by biscuits.
  9. Finally, layer the top with sieved cocoa.
