Sultana Rock Buns (Fay Anne de Freitas)
8 oz self-raising flour
4 oz margarine
1 tsp baking powder
4 oz soft brown sugar/Demerara sugar

1 egg
Milk
4 oz sultanas
Flaked almonds for decoration
  1. Lightly grease baking tray.
  2. Sift flour and baking powder in a mixing bowl.
  3. Cut the margarine into small pieces and rub in until the mix becomes like fine breadcrumbs.
  4. Stir in the sugar.
  5. Beat the egg and stir into the mixture, adding a little milk if required to make a stiff consistency.
  6. Stir in the sultanas.
  7. Using a little teaspoon, make little mounds in the hollows of the baking tray.
  8. Add flaked almonds on top of each mound.
  9. Bake at 200F for 15-20 minutes or until golden brown.
  10. Cool on a wire rack.
