Sultana Pudding (Maria Teresa Faria de Freitas)
4 oz flour
2 oz sultanas
2 oz butter
2 eggs

2 oz sugar
½ tsp baking powder
Milk mix

  1. Clean sultanas and decorate a greased mould with some of them.
  2. Cream the butter and sugar and gradually add eggs and flour alternately, reserving 1 dessertspoon of flour for later.
  3. Add the rest of the sultanas and sufficient milk to make a dropping consistency.
  4. At the last, add the baking powder with a spoonful of flour.
  5. Turn into the prepared mould which should be 2/3rds full, and cover with greased paper.
  6. Steam steadily for 1 ½ to 2 hours.
  7. Turn out and serve with jam sauce.
