Steamed Jam Pudding (Delma Gomes)
1 cup self raising flour
1 egg beaten

¼ cup suet
2 tbsp (3T) milk

¼ cup castor sugar
½ cup apricot jam sieved
  1. Combine the dry ingredients in a bowl and make a well in the centre.
  2. Pour in the egg and milk and mix on low speed until blended.
  3. Put half of the jam in the base of a 1 pint pudding basin. Spoon the suet mixture on top.
  4. Cover with foil or grease-proof paper and steam for 1 ½ hours.
  5. Invert into a serving dish and pour the remaining jam over.
