Spicy Pork [8] (Fay Anne de Freitas)
1 lb lean pork
5 sprigs scallion
2 cloves garlic - chopped
2 shallots – chopped
1 onion – sliced
1 fresh hot pepper – chopped
3 stalks celery – cut diagonal
1 tsp ginger – grated
½ tsp brown sugar

2 tbsp each of soy, sherry and oyster sauce
1 tbsp tomato ketchup
½ tsp accent
1 tsp salt
1 dash black pepper
½ cup water chestnut – sliced
½ cup bamboo shoots
1 can straw mushrooms or 8 mushrooms sliced

  1. Cut pork into thin slices
  2. Season pork with the accent, salt and pepper
  3. Marinate for 30 minutes.
  4. Brown the sugar in 2 tbsp of oil, then  add the pork, stirring quickly.
  5. Cover and cook for about 2 minutes.
  6. Add the remaining ingredients and cook for 2 minutes.
  7. Should the pan become dry, add ¼ cup of broth or water.
