Spanish Rice (Delma Gomes)
2 ½ cups raw rice
2 onions cut up fine
1 jar olives
1 tbsp salt
1 Oxo cube

1 can fine peas
1 can tomatoes
2 or 3 green peppers cut fine
2 tbsp soft lard
  1. Add to a pan enough water to cook 2 ½ cups of rice.
  2. Add the onions, and the tomatoes with liquid and add the green peppers.
  3. Add crushed Oxo cube together with the liquid from a jar of olives.
  4. Bring to the boil.
  5. Add the halved olives  and peas when the rice is just about cooked.

Spanish Rice 2 (Delma Gomes)
1 large onion
2 cups raw rice
1 Oxo cube
2 cans tomatoes
½ lb link sausages


1 tbsp salt
1 small jar olives
½ tsp pepper
1 can peas

  1. Fry the large onion and then drain.
  2. To the 2 cans of tomatoes, add enough liquid to cook 2 ½ cups of rice.
  3. Add the onions, rice, salt, pepper and crushed Oxo cube.
  4. Cover and bring to the boil.
  5. Uncover and add the sliced sausages and the peas when the rice is just about cooked.
