- Wash the pork until clean.
- Tie pork in a floured cloth and boil in salted water until tender.
- Remove and then divide the head and cut into pieces. Skin the tongue and cut lengthways; split open the trotters.
- Pack into a deep dish or platter.
- Create the sauce by squeezing three large limes and adding sufficient water and salt to make a strong sauce. Add a bruised red pepper.
- Pour over the meat. And turn to mix well. Leave sit overnight.
- When ready to serve, arrange the slices on a meat dish with parts of tongues and trotters alternately.
- Make a fresh sauce of lime juice, salt and water and throw over the dish.
- Garnish with slices of raw onions, pepper, sprigs of parsley and cucumber slices.
