Shrimp Toast (6 Servings) (Fay Anne de Freitas)
½ lb shrimp
6 slices white sandwich bread
8 water chestnuts
3 tbsp corn starch
1 tsp salt
2 tbsp sherry

1 egg – lightly beaten
2 sprigs scallion – finely chopped
1 tbsp oyster sauce
1 tsp accent
½ tsp grated ginger/cayenne pepper for garnish

  1. Dry the bread out in a warm oven for 15 minutes.
  2. Cut each slice into 4 squares.
  3. Mince or chop shrimp into a fine pulp.
  4. Finely chop the water chestnuts.
  5. Mix with the shrimp, scallion, salt, sherry, cornstarch and beaten egg.
  6. Spread the mixture on the bread.
  7. Sprinkle with the cayenne pepper.
  8. Heat about 4 cups of oil.
  9. Drop the bread, shrimp-side down, into the oil for about 30 seconds. Lift out and then drop on the plain side.
  10. Drain and serve
