Short Bread Biscuits (Delma Gomes)
1 lb flour
4 oz castor or icing sugar
½ lb butter

2 oz lard
  1. Cream the butter, sugar, and lard.
  2. Add the flour and bake.

½ lb butter
¼ lb rice flour

¼ lb castor sugar
Large pinch of salt
½ lb plain flour
  1. Line a baking sheet with 2 thicknesses of grease-proof paper.
  2. Mix the butter and sugar together but do not liquify.
  3. Sift the flour, salt, and rice flour, and then add to the butter mix, working them in until the dough is the consistency of good short crust.
  4. Roll out carefully ¾” thick and bake immediately in a moderate oven 350F/176C until pale golden brown, covering the shortbread with grease-proof if necessary to prevent browning.

¼ lb butter

1 oz lard
2 oz sugar

  1. Cream the sugar and butter a little
  2. Add the lard, and then the flour.  
  3. Roll out and cut to form biscuits.
  4. Place biscuits on a floured board and bake until a nice golden colour.
