Semolina Pudding (Fay Anne de Freitas)
4 tbsp ghee
1 tbsp sultana
1 cup semolina
1 cup sugar

4 cloves
Small piece of cinnamon
3 cups water
1 tbsp rosewater
4 white cardamons – skinned and ground
1 tbsp almonds, blanched and chopped
1 tbsp pistachio nuts or cashews – chopped
  1. Heat the ghee and then fry the sultanas and semolina until golden, stirring continuously.
  2. Add the cardamon, sugar, cloves, cinnamon and water.
  3. Mix well and gently cook for a further 15 minutes.
  4. When all of the excess water has evaporated, pour into a shallow dish.
  5. Sprinkle with rosewater and decorate with the nuts.
  6. Serve hot or cold.
