Scalloped Rice In Chicken [4] (Maria Teresa Faria de Freitas)
1 tbsp fat
2 tbsp flour
1 tsp salt
A few grains of pepper
1 ½ cups evap milk
1 ½ cups water or chicken stock
2 cups boiled rice
Breadcrumbs
2 cups finely chopped cooked chicken

Heat the fat in a skillet. Add the flour, salt, pepper, evaporated milk diluted with either the water or chicken stock. Stir constantly over hot water until thick. Add the chicken and rice and mix well. Pour into a large, greased casserole or into 4 individual bake dishes. Sprinkle with breadcrumbs. Bake in the oven at 375F for about 25 minutes.
