Saint Clement’s Pudding (Fay Anne de Freitas)
2 oz self-raising flour
2 oz butter
2 separated eggs

6 oz sugar
1 orange

1 lemon
8 fl.oz milk
  1. Cream the butter and sugar.
  2. Add the flour and grated orange rind, beaten egg yolks and milk.
  3. Add egg whites beaten stiffly and add fruit juice.
  4. Pour into greased soufflé dish and bake in a moderate oven 325F for about an hour.
