Rolo – Roll (Maria Teresa Faria de Freitas)
Ingredients:
3 eggs
Equal weight of sugar as the eggs
Equal weight of flour as the eggs


Madeira wine
Grated lemon peel
Cinnamon


Preparation:
Whip the egg yokes with the sugar, but not in excess. Beat the egg whites separately to a not too thick consistency. Then, mix the yokes and the whites and a little bit of Madeira wine, grated lemon and a bit of cinnamon. Add the flour and mix gently. Then, place in a buttered tray coated with parchment paper. Bake in the oven at medium temperature. Once cooked, albeit not in excess, remove from the oven and turn over the tray onto paper of the same size as the tray with sugar sprinkled over it
