Roast Pork Tenderloin (Delma Gomes)
4 lb pork loin
½ tsp pepper
2 onions sliced
¼ cup currant jelly

2 cloves garlic
1 tsp sage
2 carrots sliced
1 tsp dry mustard

2 tsp salt
½ tsp nutmeg
1 cup water
Cloves

  1. Mash the garlic with the salt. Add the pepper, sage and nutmeg to the mixture.
  2. Rub the mixture well into the meat.
  3. Spread the onions and carrots in a shallow roasting pan. Set the meat on top, fatty side up.
  4. Splash the water over the meat.
  5. Roast in the oven at 325F/162C for  1½ hours.
  6. Slash the fat in a crisscross pattern.
  7. Combine the current jelly with the dry mustard and spread over the meat, and then stud with the cloves.
  8. Roast for a further hour or more.
