Rice Pudding (Delma Gomes)
4 tbsp pudding rice
A little butter
Whole black cherry jam

¾ pint gold top milk
Fresh ground nutmeg
4 tbsp sugar
½ pint single cream
Ground cinnamon

  1. Butter a large shallow dish and put the rice into it.
  2. Add the milk, cream and sugar, stirring to mix, and then set aside for 45-60 minutes.
  3. Stir again, and dot the top with flecks of butter, nutmeg and cinnamon.
  4. Bake at 300F centre-oven for 2 ½ to 3 hours and then serve with the jam.
