Quiche Lorraine [6-8] (Delma Gomes)
Regular pastry for a 9” pie
½ lb Swiss cheese – sliced
½ tsp salt
1 cup light cream or 2 cups milk

Swiss cheese custard pie
4 eggs
Optional cayenne/nutmeg
1 tbsp melted butter
½ lb diced bacon
1 tbsp flour
1 cup milk
  1. Set oven to 375F/190C.
  2. Line a 9” baking pan with the pastry.
  3. Fry the bacon until crisp.
  4. Alternately arrange bacon and the sliced cheese over the pastry in the pan.
  5. Beat the eggs until blended and add to the flour.
  6. Add salt, cayenne and nutmeg to taste.
  7. Add either milk or cream and the melted butter..
  8. Pour the resulting custard over the cheese and bacon.
  9. Bake the pie on the lower rack of the preheated over for about 40 minutes – or until the custard has set.

Serve warm.
