Quiche (Fay Anne de Freitas)
9” pie shell
2 oz Swiss cheese
6 large eggs

½ cup cooked meat/veg/seafood to taste
1 ½ cups Half and Half milk
Salt, pepper, herbs, spices to taste

  1. Sprinkle everything except the eggs, milk and seasoning into the pie crust, distributing evenly.
  2. Beat the eggs and then blend in the milk and seasonings to taste.
  3. Pour the mix over the fillings in the pie crust.
  4. Bake at 375F for 35 to 40 minutes in a standard oven, or at 325F  for 25 to 30 minutes in a convection oven.
  5. Quiche is done when a knife inserted into the centre comes out clean.
  6. Let stand for five minutes before serving.
