Queen Cakes [24] (Fay Anne de Freitas)
4 oz margarine
6 oz self-raising flour
1 oz currants

4 oz castor sugar
2 eggs
½ tsp vanilla essence
Milk
Small cake cases
  1. Cream the margarine and sugar together until light and fluffy.
  2. Beat the eggs lightly in a bowl and then add gradually to the creamed mixture, beating well after each addition.
  3. Sift the flour into the mixture and fold in the currants.
  4. Stir in the essence and enough milk for a dropping consistency.
  5. Half fill the cases with the mixture, placed in baking trays, and bake at 190F for 15 to 20 minutes or until risen and golden.
