Pudding de Semilha - Potato Pudding (Maria Teresa Faria de Freitas)
The potato should be floury. Cook the potatoes and then grate them whilst still hot through a sieve. Then add and good amount of butter. Kneed well with sugar, milk, wine, cinnamon powder, citron, eggs with whites, a pinch of salt. Mix all the ingredients well, adding a lemon peel, which is removed once the mixture is put in the baking tray. The mixture should not become too hard. Add raisins. All quantities to taste. Amounts not indicated.

Whosoever wishes, can make puddings of any other ingredient, such as chick peas, bread crumbs, potato, etc. In any case, the other ingredients and preparation is the same.
