Pudding Cake (Maria Teresa Faria de Freitas)
1 lb flour
½ lb raisins
1 lb butter
1 lb brown sugar
½ lb currants
½ citrón - diced
½ lb prunes - destoned
1 lb almonds - blanched
10 eggs
2 ct nutmeg
½ bottle brandy
½ bottle port
½ bottle cocktail cherries


  1. Four days before making the cake, pound the raisins, citron and half of the almonds in a mortar. Place these fruits with grated nutmeg in a jar – pour in the liquor and let it stand.
  2. Wash the butter well. Mix with the sugar until well risen.
  3. Throw in the ingredients from the jar.
  4. Beat the egg and add to the mixture.
  5. Lastly mix in the flour.
  6. Place the mixture in a well buttered pan and bake.
