Pommes Fondant (Delma Gomes)
1 ½ lbs potatoes
Seasoning
2 oz butter

Chopped parsley
2 tbsp stock
Salt

  1. Cut the potatoes into pieces the size of walnuts.
  2. Boil in salted water until tender but not broken, and then drain.
  3. Heat the butter in a pan and add the potatoes and seasoning, turning until they are golden.
  4. Add the stock and cook until the liquid has evaporated.
  5. Garnish with chopped parsley
