Pommes Anna (Delma Gomes)
1 lb potatoes
2 – 3 oz butter or dripping
Parsley

Seasoning
Cooked carrot slices

  1. Peel and slice potatoes very thinly.
  2. Melt the butter and brush sides and bottom of a cake tin or round Pyrex dish.
  3. Put in potato slices layer by layer, seasoning well.
  4. Continue until dish is filled and then pour the last of the butter over the top.
  5. Cook for one hour in a moderately hot oven,
  6. Turn out of the dish onto a hot dish and garnish with parsley and carrots.
  7. Cut into slices like a cake.
