Peach Flan (Fay Anne de Freitas)
2 oz flour
2 oz brown sugar
Lemon rind
Pastry
2 oz butter
1 tsp mixed spices
2 oz chopped nuts
1 tin peaches

  1. Make up the pastry and line a dish.
  2. Rub the other ingredients together, except half of the nuts and the peaches, in a bowl until granular like crumble.
  3. Add the nuts and mix until distributed evenly.
  4. Put the peaches on top of the pastry and then pour the mixture over the peaches.
  5. Sprinkle the remaining nuts over the top.
  6. Bake.
