Pancakes [8] (Fay Anne de Freitas)
4 oz Plain or self-raising flour
Pinch of salt
½ pint of milk
 1 tbsp melted butter
1 egg

1.      Sift flour and salt into a bowl.
2.      Beat to a smooth batter with the unbeaten egg, half of the milk, and the melted butter.
3.      Let batter stand for 2 hours.
4.      Fry portions on a medium hot skillet

 
Pancakes – Spicy – Dosa [8] (Fay Anne de Freitas)
 
2 cups rice flour
2 tbsp split black pea flour
 ½ tsp brown sugar
½ tsp baking powder
3 green chilis finely chopped
 Water

  1. Mix the ingredients well and beat in enough water to form a batter.
  2. Let stand for half an hour in a warm place.
  3. Heat frying pan, wipe with ghee (see below).
  4. Fry two spoonful’s of batter per portion.
  5. Serve with yogurt and chutney and the following Ghee filling.

12 oz potatoes
1 tbsp grated coconut
2-4 green chilis chopped
1 inch ginger
1 tsp ghee
1 chopped onion
½ tsp split black pea powder
1 ½ tsp split channa dhal powder
1 tsp mustard seeds
½ tsp cumin
½ tsp turmeric
 ½ tsp masala paste

  1. Peel the potatoes, boil and mash.
  2. Grind the coconut, chilis, ginger and a few drops of water to form a paste.
  3. Heat the ghee and fry the chopped onion. Add the dhal, mustard seeds, cumin, turmeric and then stir fry for a few minutes. Add the potato and the masala paste and continue frying for 5 minutes.
  4. Place a portion of the filling into each pancake and fold.
  5. Fry the pancakes in ghee until crisp.
