Orange Layer Cake (Delma Gomes)
7 ½ oz plain flour
2 oz butter
2 eggs
1 level tsp baking powder
2 oz shortening
Grated rind of 1 orange
½ level tsp salt
9 oz castor sugar
  1. Juice of one orange and add water to make 6 liquid ounces
  2. Sift the flour with the baking powder and salt.
  3. Cream the butter and shortening with the orange rind, add the sugar and beat until light and fluffy. Whisk the eggs and add them gradually to the mixture and then beat in thoroughly.
  4. Stir in the sifted flour alternately with the orange juice/water.
  5. Pour the mixture into prepared tins and bake in a moderate 350F/176C oven for 25 – 30 minutes.
  6. Sandwich with orange filling – jam or marmalade.
