Orange Butter Frosting – Very good (Delma Gomes from Noémi McCowan)

1 tbsp grated orange rind ½ tsp grated lemon rind 1/8 tsp salt
| 4 tbsp orange juice 2 tsp lemon juice 3 cups sifted confectioners sugar | 3 tbsp butter 1 egg yolk unbeaten Wine |
- Add the orange and lemon rinds to the fruit juices and let stand for 10 minutes. Strain, if desired.
- Cream the butter, add the egg yolk and stir to mix well.
- Add part of the sugar gradually, blending after each addition.
- Add the remaining sugar alternating with fruit juice until of the right consistency to spread.
- Beat after each addition.
