Norwegian Soused Herring (Delma Gomes)
2 lbs. boned herring OR
Split the fish - remove the back bones
Bay leaves
Peppercorns

Water
 Vinegar
  1. Tidy the edges of the fish neatly with kitchen scissors. Put a bay leaf and a few peppercorns on each herring and roll them up tightly, packing them close together with the joints underneath on a heat-proof dish.
  2. Pour equal quantities of water and vinegar over the rolled herrings until the liquid comes halfway up their sides.
  3. Sprinkle a few cloves and then put the dish in a moderate over 375F/190C for 40 minutes.
  4. Remove and allow to cool.
  5. Serve cold with white cabbage and potato salad.
