Muffins (Delma Gomes - Boston Cooking)
2 cups pastry flour
2 tbsp sugar
1 or 2 eggs

3 tsp baking powder
1 cup milk
½ tsp salt
4 tbsp melted butter
  1. Mix and sift the dry ingredients.
  2. Beat egg until light, add butter and milk, and then add to flour mixture all at once
  3. Stir only enough to dampen the flour.
  4. Drop by spoonful into buttered muffin pans.
  5. Bake at 400F/205C for 15-20 minutes.
  6. Create Rolled Oats muffins by substituting 1 ½ cups of oats per cup of flour.
Muffins - Carnation (Delma Gomes)
2 cups sifted flour
2 tbsp sugar
1 egg

3 tsp baking powder
1 cup milk
½ tsp salt
3 tbsp shortening
  1. Sift the flour, baking powder, salt and sugar into a bowl.
  2. Cut in the shortening until the mixture resembles fine cornmeal.
  3. Beat the egg and add the milk to it.
  4. Pour into the dry mixture until the ingredients are dampened but still lumpy. DO NOT OVERMIX.
  5. Drop the batter into muffin tins lined with paper cups. Fill each cup half full.
  6. Bake in a super-heated oven at 425F/218C for 20 minutes.

Create Rolled Oats muffins by substituting 1 ½ cups of oats per cup of flour.
