Mocha Cake (Maria Teresa Faria de Freitas)
CAKE
4 eggs
2 oz flour
¼ lb castor sugar



2 oz cornflour
½ tsp baking powder

  1. Butter 2 cake tins.
  2. Beat yolks and sugar until creamy.
  3. Add the flour and baking powder.
  4. Whip whites very stiffly and told them in lightly.
  5. Pour the mixture into the two cake tins and bake in a moderate oven for 40 minutes.
  6. Turn them out to cool.
  7. Spread butter icing in between. Then coat with glacé icing.

BUTTER ICING
2 oz fresh butter
3 ½ oz icing sugar
½ tbsp coffee essence

GLACÉ ICING
½ lb icing sugar
About 2 tbsp warm water
½ tsp coffee essence

Sieve the icing sugar into a bowl. Add tepid water, flavouring and colouring if desired. Mix to a coating consistency. Beat until smooth and glossy.
