Mint Sauce (Delma Gomes)
½ cup Mint – destalked and finely chopped


1 cup Vinegar
¼ cup brown sugar
  1. Mint sauce is usually made too thin. There should be about half as much chopped mint as vinegar and a quarter as much ground sugar.
  2. Wash a good handful of mint in hot water, rinse in cold water and then pick out all of the stalks. Squeeze the leaves as dry as possible in a cloth.
  3. Chop the mint very finely and mix with vinegar and sugar in a tureen about an hour before it is required for serving.
