Mayonnaise  (Delma Gomes)
1 egg yolk
4 tbsp mustard

2 tsp salt
4 tbsp olive oil
4 tbsp vinegar
1 tbsp sugar
  1. Cream the yolk with the sugar, salt and mustard.
  2. Add oil a drop at a time and stir.
  3. Add the vinegar last, stirring.

Mayonnaise

¼ cup vinegar or lemon juice
¼ cup salad oil or melted butter
A few grains cayenne pepper

2/3 cup condensed milk
1 egg yolk unbeaten
1 tsp dry mustard
½ tsp salt

  1. The mixture will blend perfectly. Just stir the ingredients together in a bowl.
  2. Then chill. It will be as smooth as the finest chef’s mayonnaise.

Mayonnaise - Cooked salad dressing (Delma Gomes)
3 cups shredded cabbage
1 ½ tbsp sugar
1 tsp salt

1 tsp mustard powder
1 egg – slightly beaten
1 ½ tsp flour
¾ cup milk
4 tbsp vinegar or lime juice
1 tbsp butter

  1. In a pot, mix together all of the ingredients except the butter.
  2. Bring to a boil – stirring until thick.
  3. Add the butter and blend in well.
  4. Allow to cool. Makes one cup
