Marmalade Pudding (Maria Teresa Faria de Freitas)
2 oz breadcrumbs
2 oz flour
2 oz suet
2 oz candied peel

1 grated rind of lemon
1 oz castor sugar
1 egg
¼ tsp baking powder
½ gill milk
2 tbsp marmalade
1 gill marmalade sauce
1. Chop the suet and shred the peel.
2. Mix all the dry ingredients.
3. Add marmalade, egg and milk, adding more milk if mixture is too stiff.
4. Put mixture into greased basin, cover with greased paper and steam for 2 hours.
5. Turn out and pour over with marmalade sauce.
